I had been playing with figs from an orchard in Mangawhai (Fig'n Delicious by name) and had it in mind that they would make a great cake in the extreme cake range. Unfortunately, I had missed the season and had to wait about 9 months to try to make the cake. I just pictured in my mind it would be a stunning cake.

And I remember my disappointment when I made the first cake and tried the first slice because it tasted nothing like fig, so I gave the cake away to people and they came back raving about it. Why I asked? it doesn't taste like fig. The answer came back the same each time. The texture, the texture of the cake is amazing!

And so it is, after a while you can even start to taste the fig poking its subtle aroma through the chocolate.

It has become the second-best selling cake in the Paleo Cake range.
