Banana seed muffins

❤️ (not vegan but can be substituted to vegan equivalent ingredients)

Ingredients 

2 over ripe bananas 

2 eggs 

1/4 cup of nut butter 

2 tablespoons of olive oil

1/4 cup of coconut flour 

1 tablespoon of cinnamon plus pinch of nutmeg 

1/2 teaspoon of baking powder and 1/2 teaspoon of baking side 

1 teaspoon of vanilla extract 

2 natural abundance almond, flax and Kumara crackers 

1/2 cup of seeds or chocolate chips

 

Directions 

Add all the ingredients except the crackers, seeds & chocolate chips to a blender and blend until well combined.

Pour in muffin pans and top with crushed crackers, seeds (and chocolate chips if you like) 

 

Bake at 180 for 25 minutes or until a tooth pick comes out clean.

Or microwave them for 2 minutes!! 

Let them cool and enjoy.
