Cookie Crumble Fudge by Natural Abundance

Ingredients

Fudge base:

  • 1/2 cup peanut butter

  • 2 overripe bananas

  • 2 Tbsp coconut oil, melted

  • Splash of vanilla extract

  • Pinch of salt

Cookie crumble:

  • 2 Tbsp butter (or vegan butter alternative)

  • 1/4 cup raw sugar

  • 2 Tbsp almond milk

  • 1 cup oat flour

  • 1/2 cup oats

  • 2 servings NB crackers

  • 1/2 cup dark chocolate chips

Recipe:

  1. For the base, mash the bananas in a bowl and mix with peanut butter and coconut oil. Add splash of vanilla extract and pinch of salt.

  2. In another mixing bowl for the cookie crumble, cream together the butter and sugar, then add in the almond milk.

  3. Mix in the flour, oats, crumbled NB crackers, and chocolate chips. 

  4. Now combine the two bowls and gently fold together, leaving a small amount of cookie crumble left. 

  5. Pour combined mixture into a lined-baking tray or silicone base, sprinkle leftover cookie crumble and chocolate on the top, and freeze until firm. 

Due to the coconut oil, this fudge is best stored in the freezer.
