Pumpkin Falafels by Natural Abundance

Ingredients: (makes 10 large falafels)

  • 300g pumpkin, boiled or baked

  • 1 can of chickpeas, drained and rinsed (240g)

  • 1 tsp vinegar

  • 50g flour

  • 20g almond meal

  • 2 servings Natural Abundance Almond and Flax Raw crackers

  • 1 tsp baking powder

  • Spices of choice (I used garlic, curry powder and cumin)

  • Pinch of salt

Recipe:

  1. In a mixing bowl, add your flour, almond meal, baking powder, and crumbled NB raw crackers. Sit until combined.

  2. In another bowl, mash pumpkin and chickpeas, then add vinegar and pinch of salt along with spices of choice.

  3. Combine two mixtures and stir until combined. 

  4. Scoop the mixture using a 1/4 cup measurer onto baking paper, making 10 even sized balls.

  5. Bake for 30-40minutes at 180 degrees until firm.

  6. Serve with tahini or yoghurt sauce
