Baked Stuffed Kumara by Natural Abundance

Ingredients: 


- 1 medium sized kumara
- 1/2 can of kidney beans 
- 1/2 onion
- 1/2 cup of baby peas
- 1/4 of an avocado
- 1 serving of Paleo crackers 
- Spices to taste


Recipe:


1. Bake kumara on 180 degrees for 50-60minutes.
2. Fry onion on a saucepan, then add the kidney beans and baby peas to the pan and toss to combine. Spice however you like. 
3. Take of the heat and pour into a mixing bowl
4. Take 1 serving o Natural Abundance Paleo Crackers and roughly crumble into the bowl. Stir to combine.
5. Once the kumara is done baking, let cool slightly. Once cool, cut the sweet potatoes open and shred the flesh from the skin so that the inside is mashed and easy to scoop out.
6. Evenly spread the black bean and cracker mixture on top of the kumara, add avocado to taste, and crumble some more crackers on top!
