Berry Rocky Road Slice by Natural Abundance

A healthy version of Rocky Road Slice with our Protein Crackers- choose your own inclusions to make this yummy snack!

Ingredients:

Base:

  • 125g dark chocolate

  • 2 Tbsp coconut oil

  • 1 Tbsp peanut butter

Inclusions:

  • 2 servings Natural Abundance protein crackers

  • 1/2 cup shredded coconut (50g)

  • 1 serving cereal (I used XO crunch)

2nd layer:

  • 1 cup berries

  • 1 cup yoghurt

  • Sprinkles (optional)

Recipe:

  1. Melt dark chocolate and coconut oil in a microwave safe bowl, then add in peanut butter and stir to combine.

  2. Crumble 2 servings of Natural Abundance protein crackers into the bowl, then add in whatever inclusions you prefer. I chose to use 1/2 cup of shredded coconut and 1 serving of XO crunch cereal. Pour base layer into lined baking tray or silicone mould.

  3. In another bowl, mix together berries and yoghurt. Pour on top of base layer, add sprinkles, and freeze until firm.

Other inclusions can be:

  • Marshmallows

  • Fried fruit or nuts

  • Cookies, pretzels, or more crackers

  • Anything you like!
